Ingredients

Scale
  • 1 pound chicken thighs (cut into 2-inch strips)
  • 2 large eggs
  • 1 cup mochiko flour
  • 1/4 cup potato starch
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (minced)

Instructions

  1. Marinate the chicken: In a mixing bowl, combine soy sauce, sugar, garlic, and ginger. Add chicken strips and let marinate for at least 30 minutes.
  2. Prepare the coating: In one bowl, whisk eggs. In another dish, mix mochiko flour and potato starch.
  3. Coat the chicken: Remove marinated chicken from the marinade. Dip each strip into the egg mixture, then coat with the flour mixture.
  4. Heat oil: In a frying pan over medium-high heat, add oil until hot.
  5. Fry the chicken: Carefully place coated chicken strips in hot oil and fry until golden brown on both sides (about 5-7 minutes per side).
  6. Drain and serve: Remove from oil and drain on paper towels. Serve hot with spicy mayo or garnished with furikake.
