  • Vegetable broth
  • Parmesan cheese
  • Salt
  • Black pepper

  • Breadcrumbs

Instructions

  1. In a mixing bowl, bring vegetable broth to a boil. Gradually whisk in cornmeal until thickened.
  2. Stir in grated Parmesan cheese, salt, and black pepper.
  3. Pour the mixture into a lined baking sheet and spread evenly to about ½ inch thickness. Allow cooling until firm.
  4. Cut into rounds using a cutter or glass and set aside.
  5. Prepare three bowls for flour, beaten eggs (or flaxseed mixture), and breadcrumbs.
  6. Coat each round by dipping in flour, then egg mixture, and finally breadcrumbs.
  7. Heat oil in a non-stick frying pan over medium heat and fry each round until golden brown on both sides (about 3-4 minutes per side).
  8. Transfer fried rounds onto a baking sheet lined with parchment paper and bake at 400°F (200°C) for an additional 5-10 minutes until crisp.
