Warm and comforting, this Crock Pot Pasta Fagioli is the perfect meal for chilly days. Bursting with rich flavors from garlic, herbs, and tomatoes, this Italian-inspired soup is not only easy to prepare but also hearty and satisfying.

  • 2 slices Turkey Bacon (cooked, drained, and finely sliced)
  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • 1 cup Parmesan Reggiano

Instructions

  1. Cook turkey bacon in a skillet until crispy, then add to the slow cooker.
  2. Combine onions, carrots, celery, garlic, herbs, tomato paste, crushed tomatoes, beans, chicken broth, and water in the slow cooker; stir well.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours.
  4. Add uncooked ditalini pasta 30 minutes before serving; stir occasionally until tender.
  5. Serve hot with freshly grated Parmesan cheese on top.
