  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes, with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Break it apart with a spoon for an even texture.
  2. Add the diced onion and minced garlic to the skillet; cook until the onion is translucent (about 3-5 minutes).
  3. Transfer the beef mixture into your slow cooker.
  4. Add kidney beans, black beans, corn, diced tomatoes (with juice), beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.
  5. Cover and set your slow cooker to low for about 6 hours or high for 3 hours.
  6. Once cooking is complete, stir well and adjust seasoning if needed before serving hot.
