  • 1 packet active dry yeast (2 1/4 teaspoons)

  • 1 tablespoon olive oil

  1. In a bowl, combine warm water, sugar, and yeast; let sit for 5-10 minutes until frothy.
  2. Meanwhile, mix flour and salt in another bowl.
  3. Combine the yeast mixture and olive oil with the flour mixture; stir until dough forms.
  4. Knead on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover with a towel, and let rise for about 1 hour or until doubled in size.
  6. Preheat oven to 475°F (245°C).
  7. Punch down the dough; divide into four pieces and shape into small baguettes.
  8. Rest shaped baguettes on a parchment-lined baking sheet for about 20 minutes.
  9. Optionally brush tops with beaten egg for added shine before baking.
  10. Bake for 20-25 minutes or until golden brown.
