  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 2 tbsp olive oil
  • Optional: 1/4 cup crumbled feta or goat cheese
  • Optional: 2 tbsp toasted almonds, sunflower seeds, or walnuts

Instructions

  1. Wash and dry the strawberries and cucumber. Hull the strawberries and slice them; thinly slice the cucumber into rounds or half-moons.
  2. In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper to create the dressing.
  3. In a large mixing bowl, combine cucumbers, strawberries, herbs, and cheese if desired.
  4. Drizzle half of the dressing over the salad ingredients; gently toss to coat without crushing the fruit.
  5. Transfer to a serving platter; garnish with nuts or seeds and drizzle with remaining dressing before serving.
