  • 1 garlic clove
  • 400ml coconut milk
  • 2 tablespoons Thai yellow curry paste
  • 500g cooked rice
  • Fresh coriander for garnish
  • Olive oil for cooking

Instructions

  1. Marinate chicken: In a mixing bowl, combine chicken thighs with grated garlic, half of the oyster sauce, salt, and pepper. Set aside.
  2. Prepare curry broth: In a saucepan over medium-high heat, add a splash of coconut milk. Stir in chopped coriander stalks, curry paste, remaining oyster sauce, water, and coconut milk. Bring to a boil then simmer for 10-15 minutes.
  3. Cook chicken: In a frying pan with olive oil over medium-high heat, cook marinated chicken until charred and cooked through (6-8 minutes).
  4. Assemble: Serve cooked rice in bowls topped with curry broth and sliced chicken. Garnish with crispy onions and fresh coriander.
