  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk or cream
  • 1 tablespoon powdered sugar
  • 1 cup heavy whipping cream
  • 3-4 drops pure peppermint oil
  • 1/4 cup heavy whipping cream (for glaze)
  • 3 1/2 ounces bittersweet or dark chocolate (70% cocoa)
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine ground graham crackers, melted butter, and sugar. Press into the tart pan and bake for 10 minutes. Cool completely.
  3. Bloom the vegan gelatin in cold water for about five minutes, then microwave until dissolved.
  4. Melt white chocolate chips in intervals until smooth. Combine with warm milk and whisk until blended. Add bloomed gelatin and peppermint oil.
  5. Whip heavy cream with powdered sugar until medium-stiff peaks form; gently fold into the white chocolate mixture.
  6. Fill the cooled crust with mousse, smoothing it out, and refrigerate for several hours or overnight.
  7. For the glaze, heat cream to boiling; stir in dark chocolate until melted. Add corn syrup and warm water until smooth.
  8. Pour glaze over chilled mousse tart and let set at room temperature for about an hour before serving.
