  • ¾ cup Dutch processed cocoa powder
  • 1 tsp kosher salt
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups semisweet chocolate chips
  • 1 cup brown sugar
  • ⅓ cup granulated sugar
  • ½ cup hot water
  • 1 tablespoon espresso powder
  • 1 cup sour cream (room temperature)
  • ½ cup neutral oil (like vegetable or canola)
  • 2 large eggs (room temperature)

Instructions

  1. Preheat oven to 425℉ (220℃) and prepare baking sheets with parchment paper.
  2. In a jug, mix hot water with espresso powder and set aside.
  3. In a bowl, whisk together eggs, oil, sour cream, brown sugar, granulated sugar, and the espresso mixture until smooth.
  4. In another bowl, sift together flour, cocoa powder, salt, baking soda, and baking powder.
  5. Gradually add dry ingredients to the wet mixture; stir gently until almost smooth.
  6. Fold in chocolate chips until evenly distributed.
  7. Let the batter rest covered for 30–60 minutes.
  8. Spoon batter into lined muffin cups until slightly over three-quarters full.
  9. Bake at 425℉ for 5 minutes; lower temperature to 350℉ (175℃) and bake for an additional 15–18 minutes until toothpick comes out clean.
  10. Cool in pans for about 10 minutes before transferring to wire racks.
