  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1 cup cold whole milk
  • 2 cups unsalted butter (divided)
  • 8 ounces high-quality chocolate batons or semi-sweet chocolate
  • 1 large egg
  • 1 tablespoon milk (for egg wash)
  • Confectioners' sugar (optional for dusting)

Instructions

  1. Combine flour, sugar, salt, and yeast in a bowl. In another bowl, mix cold milk and melted butter. Gradually combine with dry ingredients to form dough.
  2. Knead the dough until smooth, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the butter layer by flattening it between parchment paper; chill until firm.
  4. Roll out the chilled dough into a rectangle, place the butter layer in the center, fold like an envelope.
  5. Roll out gently and fold into thirds; repeat this process two more times with chilling in between each fold.
  6. Cut triangles from the dough, place chocolate batons at the base, and roll tightly.
  7. Let shaped croissants rise on a lined baking sheet until doubled in size (about an hour).
  8. Preheat oven to 400°F (200°C), brush with egg wash, and bake for about 20 minutes or until golden brown.
  9. Cool slightly before dusting with confectioners' sugar if desired.
