  • 2 cups cooked and shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat vegetable oil and sauté chopped onion and minced garlic until soft.
  3. Add shredded chicken, cumin, chili powder, salt, and pepper; mix well and cook for another 3-5 minutes.
  4. Pour some enchilada sauce into the bottom of a baking dish.
  5. Fill each tortilla with chicken mixture and sprinkle with cheese; roll tightly and place seam-side down in the dish.
  6. Pour remaining sauce over rolled enchiladas and sprinkle with leftover cheese.
  7. Cover with foil and bake for 20-25 minutes; remove foil for an additional 5-10 minutes until cheese is bubbly.
  8. Garnish with cilantro before serving.
