  • 1 cup Pineapple Juice

  • 2 tablespoons Honey (or Maple Syrup)
  • 1 tablespoon Rice Vinegar
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (freshly grated)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Instructions

  1. Prepare all ingredients by chopping the bell pepper, mincing the garlic, and grating the ginger.
  2. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper; cook until golden brown, about 6–8 minutes per side.
  3. Add bell pepper, garlic, and ginger to the skillet; sauté for 2 minutes until fragrant.
  4. Pour in pineapple juice, soy sauce, honey, and rice vinegar; mix well.
  5. Combine cornstarch with water in a small bowl to create a slurry. Stir into the skillet until sauce thickens, about 2–3 minutes.
