  • 1/2 cup small tapioca pearls (uncooked)
  • 1/2 cup sweetened condensed milk (or condensed coconut milk)
  • 13.5 oz full-fat coconut milk

Instructions

  1. In a medium pot, bring 5 cups of water to a boil. Add tapioca pearls and cook on medium heat for 10 minutes, stirring occasionally. Turn off heat, cover, and let soak for another 10-15 minutes until translucent.
  2. Strain the cooked tapioca using a fine mesh sieve and rinse under cold running water.
  3. In a large bowl, mix the rinsed tapioca with room temperature coconut milk.
  4. Blend 17.6 oz of strawberries (reserve the rest) with sweetened condensed milk until smooth.
  5. Combine the strawberry mixture with tapioca and coconut milk; adjust sweetness if necessary.
  6. Dice remaining strawberries for garnish.
  7. Serve chilled in bowls topped with diced strawberries and fresh mint leaves if desired.
