  • Spices: paprika, salt, pepper
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prepare all vegetables by washing and chopping them into uniform pieces.
  2. In a skillet over medium heat, add olive oil and sauté the chicken thighs or breasts seasoned with salt, pepper, and paprika until browned on both sides (5-7 minutes). Remove from the skillet.
  3. Add onions and garlic to the skillet; sauté until fragrant (about 2 minutes). Then add bell peppers and zucchini; cook until softened.
