  • 1.5 cups Vegetable broth
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Cucumber (diced)
  • 1/4 cup Red onion (finely chopped)
  • 1/2 cup Fresh parsley (chopped)
  • 1/4 cup Fresh mint (chopped)
  • 3 tablespoons Lemon juice
  • 3 tablespoons Extra virgin olive oil
  • 1 clove Garlic (minced)
  • Salt and pepper to taste
  • Optional: crumbled feta cheese, Kalamata olives, toasted pine nuts

Instructions

  1. In a pot, bring vegetable broth to a simmer. Add couscous, cover, and remove from heat. Let it sit for 5 minutes until liquid is absorbed.
  2. While couscous cooks, chop tomatoes, cucumber, and red onion.
  3. In a large mixing bowl, combine couscous with vegetables and add chopped parsley and mint.
  4. In a separate bowl, whisk together lemon juice, olive oil, garlic, salt, and pepper. Pour over the salad mixture.
  5. Gently fold in feta cheese (if using), olives, and pine nuts.
  6. Adjust seasoning if necessary and serve chilled or at room temperature.
