  • 4 oz cream cheese (room temperature)
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons coconut extract
  • 1 (8 oz) can crushed pineapple (do not drain)
  • 1 1/2 cups sweetened shredded coconut (divided)

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy using an electric mixer.
