  • 12 oz strawberries (hulled)
  • For the sauce: 16 oz strawberries (hulled and halved)
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together eggs and sugar until combined. Add sour cream, olive oil, and vanilla; mix until smooth.
  3. In another bowl, combine flour, baking powder, and salt. Gradually add to wet ingredients while stirring gently.
  4. Fold in hulled strawberries carefully.
  5. Pour batter into a greased 9-inch round pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. For the sauce, cook hulled strawberries and sugar in a saucepan over medium heat for about 5-7 minutes until softened.
