Ingredients

  • 1 cup rolled oats
  • 1/4 cup ground flax or chia seeds
  • 1/2 cup peanut butter or nut/seed butter of choice
  • 1/3 cup maple syrup or honey
  • 1 tsp vanilla (optional)
  • Pinch of salt (or to taste)
  • Flavor Variations: Chocolate Peanut Butter – 1/2 cup M & M's, 3 tbsp cocoa powder, 1/4 cup mini chocolate chips, 1 tsp vanilla extract; Blueberry Lemon – 1/2 cup fruit juice sweetened dried blueberries, 1 tsp ground cinnamon, 1 tsp lemon zest, 1 tbsp fresh lemon juice; Strawberry Almond – 3/4 cup freeze dried strawberries (lightly crushed), 1 tsp ground cinnamon (or 1/2 teaspoon cardamom), 1 tbsp fresh lemon juice, 1/8 tsp almond extract; Apple Cinnamon – 3/4 cup freeze dried apples (or chopped dried apples), 2 tsp cinnamon, Pinch of nutmeg, 1 tbsp fresh lemon juice; Raisin Pecan – 1/2 cup raisins or finely chopped pecans, 1 tbsp ground cinnamon, 1 tbsp fresh lemon juice; Cherry Almond – 1/2 cup dried tart cherries (fruit juice sweetened, roughly chopped), 1 1/2 tsp ground cinnamon, 2 tsp fresh lemon juice, 1/8 tsp almond extract; Vanilla Protein Sprinkles – 2 scoops (6 tablespoons) vanilla collagen or plant-based protein, 1.25 ounce package sprinkles (or 8 teaspoons), 1 tbsp fresh lemon juice

Instructions

  1. In a mixing bowl, combine rolled oats and ground flax or chia seeds.
  2. Add nut butter, maple syrup, and a pinch of salt. Mix until well combined.
  3. Stir in your choice of flavor ingredients.
  4. Use a cookie scoop to portion out the mixture into bite-sized pieces.
  5. Chill in the refrigerator for at least 30 minutes before serving.
