  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) water (use the empty soup can for measurement)
  • 1 envelope onion soup mix
  • Dash of black pepper, garlic powder, or paprika for added flavor
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded cheddar cheese (optional)
  • 12 cups frozen mixed vegetables (optional)
  • 1 cup diced cooked chicken (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with butter.
  2. In a large bowl, mix together both soups and water with instant rice until well combined.
  3. Pour the mixture into the greased dish and spread evenly.
  4. If desired, stir in frozen vegetables or shredded cheese.
  5. Place raw chicken breasts on top of the mixture; sprinkle onion soup mix over the chicken.
  6. Cover with aluminum foil and bake for 60 minutes without lifting the foil.
  7. After baking, check for doneness (internal temperature should reach 165°F). Optionally broil for an additional 3–5 minutes for a golden finish.
  8. Let rest for 5–10 minutes before serving.
