  • 8 oz pasta (fettuccine or linguine)
  • 2 boneless, skinless chicken breasts
  • 1 bunch of asparagus
  • 8 oz cremini mushrooms
  • 1 ½ cups heavy cream
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ cup shredded provolone cheese
  • ¼ cup grated asiago cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh oregano, chopped
  • ½ tsp dried thyme
  • Salt & freshly cracked black pepper to taste
  • 2 tbsp butter

Instructions

  1. Marinate chicken strips in olive oil, minced garlic, oregano, thyme, salt, and pepper. Grill on medium-high heat for about 6 minutes until cooked through.
  2. Toss asparagus with olive oil and garlic; roast in the oven at 400°F for approximately 10 minutes. Sprinkle with Parmesan cheese and roast until golden.
  3. In a large skillet, sauté mushrooms and garlic in butter until softened. Add cream and cheeses; stir until melted and smooth.
  4. Toss cooked pasta with sauce and top with grilled chicken and roasted asparagus before serving.
