  • 1 cup granulated sugar
  • 1 tablespoon fresh lemon zest

  • 4 large eggs
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • 3 large whole eggs
  • 3 large egg yolks
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup freshly squeezed lemon juice (about 4 lemons)
  • Salt, to taste
  • 1 cup heavy whipping cream
  • 1/2 cup homemade lemon curd, room temperature
  • 1 cup heavy whipping cream, cold
  • 1/3 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Zest and juice lemons to yield ½ cup of fresh juice.
  2. Make the lemon curd by creaming butter with sugar, adding eggs and lemon juice, and cooking until thickened.
  3. Cool the lemon curd, then prepare the lemon filling by whisking eggs, sugar, lemon zest, juice, and salt over simmering water until thick.
  4. Gently fold whipped egg whites into cooled filling, followed by whipped cream and chilled lemon curd.
  5. Transfer to serving cups and chill for at least one hour before serving.
  6. Top with whipped cream before serving.
