  • 10 tablespoons unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES™ Cereal (divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and ½ cup of Fruity PEBBLES™ cereal until light and fluffy. Add the egg and vanilla extract.
  3. Mix in the flour, baking soda, and salt until just combined. Gently fold in an additional cup of Fruity PEBBLES™ cereal.
  4. Scoop out dough balls (3-4 tablespoons each), flatten them, place a vegan marshmallow in the center, wrap the dough around it, and roll in remaining cereal.
  5. Bake on a parchment-lined baking sheet for 8-11 minutes or until marshmallows peek through cracks.
