  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies (divided)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop; allow it to cool slightly.
  3. In a large bowl, mix the melted butter and sugar until smooth. Stir in eggs and vanilla extract.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to the wet mixture and stir until just combined.
  5. Fold in half of the crushed peppermint candies (and chocolate chips if using) gently.
  6. Pour the batter into the prepared pan, spread evenly, and top with remaining crushed candies.
  7. Bake for 30-35 minutes until a toothpick comes out with moist crumbs attached.
  8. Allow to cool completely before lifting out and cutting into squares.
