  • 1 1/2 teaspoons instant espresso
  • 2 large egg whites
  • 5 tablespoons white sugar
  • 3 large egg yolks
  • 2 large whole eggs
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In one bowl, combine flour and instant espresso. In another bowl, beat egg whites until soft peaks form; gradually add sugar until stiff peaks form.
  3. Whisk yolks and whole eggs in a separate bowl until light in color. Fold in the flour mixture, then gently fold in the beaten egg whites.
  4. Pour batter onto the baking sheet and bake for about 8 minutes or until golden.
  5. For the filling, whip together heavy cream, confectioners' sugar, and vanilla until thickened, then fold in mascarpone.
  6. Once cooled, spread half of the cream filling over the cake base and roll tightly using parchment paper as a guide.
  7. Dust with cocoa powder before serving.
