  • 1 clove garlic, minced
  • 1/4 cup pepperoncini brine
  • 1 pint cherry tomatoes, halved
  • Half a cucumber, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken with garlic powder, onion powder, paprika, salt, and olive oil in a large bowl or plastic bag. Refrigerate for at least 30 minutes.
  2. Prepare the salad by tossing cherry tomatoes and cucumber with salt, pepper, olive oil, and vinegar.
  3. For the sauce, melt butter in a microwave-safe bowl, then mix in garlic, pepperoncini brine, and chopped pepperoncinis.
  4. Grill the marinated chicken over medium heat until fully cooked (160°F). Let it rest briefly before slicing.
  5. Serve on a platter with hummus as the base, topped with cucumber salad and sliced chicken drizzled with pepperoncini garlic butter.
