This hearty one-pan meal combines seasoned ground turkey with tender potatoes and aromatic herbs. It’s simple, budget-friendly, and perfect for a comforting weeknight dinner.

Ingredients

1 pound ground turkey
4 medium potatoes, diced
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chicken broth
1/4 cup chopped fresh parsley

Instructions

1. Prepare the Potatoes

Peel (optional) and dice potatoes into small, even cubes for faster cooking.

2. Cook the Turkey

Heat olive oil in a large skillet over medium heat.

Add ground turkey and cook until browned, breaking it apart with a spoon (about 5–7 minutes).

Remove turkey from the pan and set aside.

3. Sauté Vegetables

In the same skillet, add onion and cook until softened (about 3–4 minutes).

Stir in garlic and cook for 30 seconds until fragrant.

4. Add Potatoes & Seasoning

Add diced potatoes to the skillet.

Sprinkle thyme, paprika, salt, and pepper over the potatoes.

Cook for 5–7 minutes, stirring occasionally.

5. Simmer

Pour in chicken broth and return the turkey to the pan.

Cover and cook for 10–15 minutes, or until potatoes are tender and cooked through.

Remove lid and cook a few more minutes if you’d like the potatoes slightly crispy.

6. Finish & Serve

Stir in fresh parsley.

Taste and adjust seasoning if needed.

Serve warm.
