  • 1 pound boneless skinless chicken thighs
  • 1 cup diced fresh pineapple
  • 1 cup cooked edamame beans
  • 1 medium avocado
  • 1/2 cup red onion (halved and sliced thinly)
  • 1 medium carrot (julienned)
  • 1 cup baby cucumbers (halved and sliced)
  • 2 stalks spring onions (sliced, green part only)
  • 2 tablespoons toasted sesame seeds
  • 2 cloves grated garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon onion powder
  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons apple vinegar
  • 2 tablespoons tomato paste
  • 1/4 cup pineapple juice
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 1/2 cup light mayo
  • 1 tablespoon sriracha (for mayo)
  • 1 tablespoon water (optional)

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. Marinate diced chicken thighs in a mixture of garlic, ginger, soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil for at least 15 minutes.
  3. In a pan over medium-high heat, cook marinated chicken until fully cooked and golden brown (about 10-12 minutes).
  4. In serving bowls, layer rice as the base and top with cooked chicken, diced pineapple, edamame beans, avocado, and any additional desired toppings.
  5. Drizzle with spicy mayo made from light mayo mixed with sriracha.
