  • 1 cup (100g) instant oats
  • ¾ cup (90g) whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ⅛ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup (room temperature)
  • ¾ cup (68g) freshly grated carrots (about 1 smallish medium, peeled first!)

Instructions

  1. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
  2. In another bowl, mix coconut oil or butter with egg and vanilla; stir in maple syrup.
  3. Combine wet and dry ingredients until just incorporated; gently fold in grated carrots.
  4. Chill dough for 30 minutes.
  5. Preheat oven to 325°F (163°C) and prepare a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the sheet and flatten slightly.
  7. Bake for 12–15 minutes until lightly golden; cool on the baking sheet before transferring to a wire rack.
