  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1 cup whole wheat bread crumbs (unseasoned)
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella

Instructions

  1. Butterfly and pound the chicken breasts until about ¼ inch thick.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Set up three shallow bowls: one with flour, one with whisked eggs, and one with breadcrumbs mixed with Parmesan cheese, pepper, basil, and parsley.
  4. Coat each chicken cutlet in flour, dip in egg, then coat with the breadcrumb mixture.
  5. Arrange breaded cutlets on the baking sheet and bake for 15 minutes; flip them over and bake for another 15 minutes until golden brown.
  6. Top each cutlet with marinara sauce and mozzarella cheese; broil for about 2 minutes until cheese melts.
