Healthy Chicken Salad Puffs

These flaky puff pastry bites are filled with a creamy, savory chicken salad studded with crisp celery and sweet grapes. The contrast of buttery pastry and cool, flavorful filling makes them perfect for brunch spreads, parties, or a light lunch.

 

Ingredients

For the Puff Pastry:
1 sheet puff pastry
2 tablespoons butter, melted
1 teaspoon coarse salt

For the Chicken Salad Filling:
3 chicken breasts
Salt and black pepper, to taste
1/2 cup celery, finely diced
1/2 cup red grapes, quartered
1 tablespoon onion, finely minced
1/2 to 3/4 cup mayonnaise
1/2 teaspoon coarse salt
1/2 teaspoon creole seasoning mix

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Roll out the puff pastry slightly and cut into small squares or rectangles. Place them on the prepared baking sheet.

Brush the pastry lightly with melted butter and sprinkle with coarse salt.

Bake for 12–15 minutes, or until puffed and golden brown. Remove and let cool completely.

While the pastry bakes, season the chicken breasts with salt and pepper. Cook them in simmering water or a skillet until fully cooked through. Let cool, then finely chop or shred.

In a large bowl, combine the cooked chicken, celery, grapes, onion, mayonnaise, coarse salt, and creole seasoning. Stir until evenly mixed. Adjust seasoning to taste.

Slice or gently press down the center of each cooled pastry piece to create space for filling.

Spoon the chicken salad into each pastry bite just before serving.
