6 tbsp salted butter
½ cup light brown sugar
½ cup granulated sugar
½ cup sweetened condensed milk
½ cup light corn syrup
16 oz almond bark or high-quality chocolate
2 cups pecan halves
Instructions
Preheat your oven to 350°F (175°C) and toast the pecans on a baking sheet for 5–10 minutes until fragrant. Let cool and chop.
Line another baking sheet with parchment paper. In a microwave-safe bowl, melt the butter, then mix in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup.
Microwave on HIGH for 6–8 minutes (stopping to stir) until it reaches 235°F or passes the ice water test. Stir in vanilla extract and chopped pecans.
Drop spoonfuls of the mixture onto the prepared baking sheet; refrigerate until set (about 20 minutes).
Melt the almond bark or chocolate until smooth. Dip each turtle mound into the melted chocolate using a fork; let excess drip off before placing them back on parchment paper.
Store in an airtight container at room temperature or in the fridge for up to 2–3 weeks.
