  • 3 lb sweet potatoes (peeled and thinly sliced)
  • 5 cloves garlic (minced)
  • 1 1/2 cups heavy cream
  • 1/2 cup butter
  • 1 tbsp fresh thyme (chopped)
  • 1/3 cup grated parmesan cheese
  • Kosher salt and black pepper (to taste)
  • 1 tsp cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant. Stir in heavy cream and cornstarch until well combined. Season with thyme, salt, and pepper.
  3. In a baking dish, layer half of the sliced sweet potatoes followed by half of the garlic butter sauce. Repeat the layers.
  4. Sprinkle grated parmesan on top.
  5. Cover with foil and bake for 30 minutes; then remove the foil and bake for another 10 minutes until golden brown.
