  • 5 cups fresh strawberries, hulled and quartered
  • 3 tbsp granulated sugar
  • 2 and 3/4 cups all-purpose flour
  • 1/4 cup + 2 tbsp granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 3/4 cup salted butter, cubed & cold
  • 1 cup cold buttermilk + 1-2 tsp extra
  • 1-2 tbsp heavy cream, for brushing tops of biscuits
  • coarse sugar, for sprinkling
  • 1 and 1/4 cups cold heavy cream
  • 3 tbsp powdered sugar
  • 1 tbsp vanilla extract

Instructions

  1. Prepare the strawberries by mixing quartered fresh strawberries with granulated sugar and optional strawberry jam in a bowl. Refrigerate while preparing the biscuits.
  2. In a large mixing bowl, whisk together flour, sugars, baking powder, baking soda, salt, and cinnamon. Cut in cold butter until crumbly.
  3. Add buttermilk gradually to form dough; avoid overmixing. Roll out to ¾ inch thick and cut into biscuits.
  4. Chill biscuits for 10 minutes, then bake at 400°F for 20-24 minutes until golden brown.
  5. For the whipped cream, beat chilled heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Assemble by layering strawberries and whipped cream between biscuit halves.
