  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lime
  • 1 cup cooked white or brown rice (or cauliflower rice for low-carb option)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/4 small red onion, finely diced
  • 1 small avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil (for lime dressing)
  • 1 tablespoon lime juice (for lime dressing)
  • 1/2 teaspoon honey (for lime dressing)
  • 1/2 teaspoon garlic powder (for lime dressing)
  • 1/4 teaspoon salt (for lime dressing)
  • 1/4 teaspoon black pepper (for lime dressing)

Instructions

  1. In a small bowl, whisk together honey, chopped chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice until well combined.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with a little salt and pepper. Cook the chicken for 6–8 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F).
  3. Once cooked, drizzle the honey chipotle sauce over the chicken while ensuring it is evenly coated. Let it rest for about 5 minutes before slicing into thin strips.
  4. In each bowl, add a scoop of rice (or cauliflower rice), followed by black beans, cherry tomatoes, corn, red onion slices, avocado slices, and chopped cilantro.
  5. In a small bowl, whisk together olive oil, lime juice, honey, garlic powder, salt, and black pepper until well mixed. Drizzle this dressing over your assembled bowl ingredients.
  6. Top each bowl with sliced honey chipotle chicken. Serve immediately for a delicious meal that everyone will enjoy!
