  • 2 cups shredded red cabbage
  • 1 cup green onions, chopped
  • 1.5 cups shredded carrots
  • 1 cup sliced almonds
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sriracha
  • 2-4 tablespoons honey (adjust to taste)
  • 2 teaspoons fresh ginger or ginger paste
  • 2 teaspoons salt

Instructions

  1. In a large mixing bowl, combine shredded green and red cabbage.
  2. Add shredded carrots and chopped green onions to the bowl.
  3. Stir in sliced almonds for added crunch.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sriracha, ginger, and honey. Adjust sweetness as desired.
  5. Pour the dressing over the vegetable mixture and sprinkle with salt. Toss until well combined.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
