  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have about 2 1/4 cups.
  2. In a large bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together the butter with both sugars. Add in cinnamon, eggs, vanilla, and mashed bananas; mix well.
  4. Combine the banana mixture with dry ingredients until just mixed—avoid overmixing.
  5. Pour the batter into a greased pan. Place a trivet in your Instant Pot with 1 cup of water.
  6. Cover the pan with foil (creating handles) and secure the lid on the Instant Pot. Cook on manual mode for 50 minutes and perform a quick release afterward.
  7. Carefully remove the pan using foil handles and let it cool completely before slicing.
