  • 1 packet active dry yeast (approx. 2 1/4 tsp)
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • 2-4 tbsp whole milk

Instructions

  1. Prepare the yeast mixture by combining warm water, sugar, and yeast in a bowl. Let it sit for about 5–10 minutes until frothy.
  2. In a mixing bowl or stand mixer, combine bread flour, all-purpose flour, and salt. Gradually add the yeast mixture and olive oil, mixing until combined.
  3. Knead the dough on a floured surface or with a stand mixer dough hook until smooth and elastic (about 8–10 minutes).
  4. Place the dough in an oiled bowl, cover it, and let it rise in a warm place until doubled in size (about 1 hour).
  5. Preheat your oven to 375°F (190°C). Punch down the dough and transfer it to a lined baking sheet; stretch into a rectangle and let it rise for another 30 minutes.
  6. Make deep dimples across the dough with your fingers and fill each dimple generously with raspberry preserves.
  7. Bake for about 20–22 minutes or until golden brown.
  8. Allow cooling slightly on a rack; mix confectioners' sugar with milk until smooth and drizzle over focaccia before serving.
