  • 2 boneless skinless chicken breasts
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 1 egg (lightly beaten)
  • 1 cup panko breadcrumbs
  • 2 oz Japanese curry roux
  • 1 yellow onion (wedge cut)
  • 1 large russet potato (peeled and diced)
  • 1 large carrot (peeled and diced)
  • 2 cups chicken stock
  • ½ cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon honey

Instructions

  1. Season the chicken breasts with salt and pepper. Set up three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs. Dredge each chicken breast in flour, dip in egg, then coat in panko.
  2. Heat vegetable oil in a deep frying pan over medium-high heat. Fry the breaded chicken until golden brown, about 4–5 minutes per side. Drain on paper towels.
  3. In another pan, heat olive oil over medium heat; sauté garlic and onion until soft. Add potato and carrot; cook for about 5 minutes.
  4. Stir in grated apple, then add chicken stock, water, soy sauce, honey, and curry roux. Simmer until vegetables are tender.
  5. Slice the fried chicken and serve over cooked rice topped with the rich curry sauce.
