  • 12 oz fresh raspberries
  • 2 large fresh mangoes, cubed
  • 1 lb fresh strawberries, cubed
  • 1 lb green grapes, halved
  • 1 lb red grapes, halved
  • 4 cups apple juice
  • 4 packets unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Wash the fruits thoroughly and lightly spray a bundt pan.
  2. In a medium bowl, sprinkle the vegan gelatin over 1 cup of apple juice. Set aside.
  3. In a saucepan, bring the remaining apple juice, sugar, and lemon juice to a boil. Pour over gelatin mixture and whisk until dissolved.
  4. Layer the fruits in the bundt pan: raspberries, mangoes, strawberries, green grapes, and red grapes.
  5. Pour the cooled gelatin mixture over the fruit layers until fully covered.
  6. Refrigerate for at least 3-4 hours to set completely.
  7. To serve, briefly submerge the pan in hot water before inverting onto a serving plate.
