  • ½ English cucumber (thinly sliced)
  • ¼ cup corn
  • ¼ cup carrots (small dice)
  • ¼ cup apple (small dice)
  • 2 hard-boiled eggs (cut into bite-sized pieces)
  • ⅓ cup mayonnaise
  • 1 ½ teaspoon rice vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Prepare the cucumber by tossing the slices with salt and letting them sit for about 10 minutes to draw out moisture. Squeeze out excess moisture and set aside.
  2. Boil the chopped potatoes with a pinch of salt until fork-tender. Add diced carrots during the last three minutes of cooking. Drain and let cool.
  3. In a mixing bowl, combine boiled potatoes, carrots, drained cucumbers, corn, diced apple, and chopped hard-boiled eggs.
  4. In another bowl, mix mayonnaise, rice vinegar, sugar, salt, and black pepper to create the dressing. Pour it over the potato mixture and gently toss to coat.
