  • 2 cups all-purpose flour (spooned & leveled)
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 cup sour cream or plain Greek yogurt
  • 2 large eggs (room temperature)
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest (from ~2 lemons)
  • 2 tsp vanilla extract
  • 1½ cups fresh blueberries + 1 tbsp flour (for coating)
  • 1 cup powdered sugar (sifted)
  • 23 tbsp fresh lemon juice
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 loaf pan and line it with parchment paper to ensure easy removal after baking.
  2. In a large bowl, whisk together all-purpose flour, baking powder, and salt. Set aside.
  3. In a separate bowl, whisk together vegetable oil, granulated sugar, sour cream, eggs, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined. Be careful not to overmix.
  5. Toss the blueberries in 1 tablespoon of flour and gently fold them into the batter using just 3–4 strokes to avoid breaking them.
  6. Pour the batter into the prepared loaf pan, smooth the top with a spatula, and bake for 55–65 minutes until a toothpick inserted into the center comes out clean. If browning too quickly, tent with foil around 40 minutes.
  7. Let cool in the pan for about 15 minutes, then mix glaze ingredients together and pour over the warm loaf. Allow it to set before slicing and enjoying.
