  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic (about 3 cloves)
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced carrots, onion, celery, and garlic; sauté until soft (5–7 minutes).
  2. Stir in black pepper, parsley, thyme, salt, and bay leaves. Add chicken breasts.
  3. Pour in chicken broth; bring to a boil then reduce heat to low and cover. Simmer for 30 minutes or until chicken is cooked through.
  4. Remove chicken and shred it using forks; return shredded chicken to the pot.
  5. Stir in dry orzo pasta; cook an additional 10–12 minutes until pasta is tender.
  6. Mix in fresh squeezed lemon juice before serving.
