  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons nonfat Greek yogurt
  • 3 garlic cloves, minced
  • 2 tablespoons finely chopped fresh herbs (basil and parsley)
  • 1.25 lbs boneless, skinless chicken breast

Instructions

  1. In a bowl, whisk together lemon zest, lemon juice, olive oil, yogurt, garlic, herbs, salt, and pepper.
  2. Pour marinade into a gallon-sized plastic bag and add chicken breast. Seal the bag after removing excess air and refrigerate for at least 30 minutes or up to 1 day.
  3. Preheat your grill on high heat. Lower two burners while keeping one on high.
  4. Remove chicken from marinade and place on low heat grates. Grill each side for about 6-9 minutes until grill marks appear.
  5. Move chicken to high flames and cook uncovered until both sides have a nice char (5-6 minutes total).
  6. Check doneness with an instant-read thermometer; it should read 160°F. Let rest for 5 minutes before serving.
