Instructions

  3. In another bowl, whisk together eggs, milk, vegetable oil, vanilla extract, and lemon zest until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Carefully fold in raspberries and white chocolate chunks.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 5 minutes at 425°F, then lower the temperature to 350°F (175°C) and continue baking for an additional 15–18 minutes or until golden brown.
  8. Allow muffins to cool in the pan for about five minutes before transferring them to a wire rack.
