  • 6 oz spinach (or 6 oz of frozen spinach, thawed, drained, and liquid squeezed out)
  • 2 Tbsp extra virgin olive oil
  • 5 cloves garlic (1 tablespoon, minced)
  • 8 oz cream cheese (broken up into six chunks)
  • 1/2 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 3/4 cup white cheddar cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 2 Tbsp Panko bread crumbs
  • 2 Tbsp parmesan cheese
  • 1/2 Tbsp unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium-sized pan over medium heat, add the extra virgin olive oil. Once hot, add minced garlic and sauté until fragrant (about 30 seconds). Add the spinach; cook until wilted if using fresh or heated through if using frozen. Remove from heat.
  3. In a mixing bowl, combine cream cheese chunks with heavy cream. Use a spatula to mix until smooth. Stir in grated parmesan cheese and white cheddar cheese until fully incorporated.
  4. Add salt, black pepper, and garlic powder to the cheese mixture. Fold in sautéed spinach until evenly distributed.
  5. Spread the mixture into your baking dish evenly.
  6. In a small bowl, combine Panko bread crumbs with additional parmesan cheese and melted butter. Sprinkle this topping over the spinach mixture in an even layer.
  7. Place your baking dish in the preheated oven and bake for about 15 minutes or until the top is golden brown and bubbly.
