  • ¼ cup monk fruit sweetener
  • ¾ cup milk
  • Pinch of salt
  • 1 cup shredded coconut (for coating)

Instructions

  1. Crush the biscuits into coarse crumbs and place them in a large mixing bowl.
  2. In a small saucepan, combine the milk, monk fruit sweetener, and butter. Heat over medium until it reaches a boil, then remove from heat and stir in the chocolate and cocoa powder until smooth.
  3. Pour the warm chocolate mixture over the crushed biscuits and stir until evenly coated.
  4. Lay a sheet of plastic wrap on a work surface, spoon the mixture along its length, and roll it into a log shape using the wrap to compact it. Twist the ends tightly to seal.
  5. Transfer to the freezer for about 3 hours to firm up.
  6. Once set, unwrap and roll in shredded coconut, pressing gently to adhere.
  7. Slice into thick rounds and serve fresh.
