  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon paprika (optional)
  • 4-8 slices Swiss cheese
  • 3 tablespoons olive oil or vegetable oil
  • ½ cup mayonnaise
  • 3 tablespoons Dijon mustard
  • 1 tablespoon honey (or to taste)
  • 1 tablespoon lemon juice

  • 1-2 tablespoons milk or cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound each chicken breast to about half an inch thick and season with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs mixed with optional seasonings.
  4. Dredge the chicken in flour, dip in eggs, then coat with breadcrumbs.
  5. Heat olive oil in a frying pan over medium heat and fry each chicken breast for about 4-5 minutes per side until golden brown.
  6. Place cooked chicken on a baking sheet, top with Swiss cheese, and bake for 5-7 minutes until melted.
