  • 50 g Brown Sugar
  • 50 g White Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 150 g All-Purpose Flour (consider using gluten-free flour if needed)
  • 1 cup Mangoes (diced, fresh or frozen)
  • 2 tbsp White Sugar
  • 1 cup Sweet Rice
  • 0.5 cup Coconut Milk
  • 2 tbsp Sweetened Condensed Milk (can omit for dairy-free version)

Instructions

  1. Rinse sweet rice under cold water until clear; soak for at least 4 hours or overnight.
  2. Drain rice and steam it in cheesecloth over simmering water for 30 minutes until tender. Mix with coconut milk and set aside.
  3. In a mixing bowl, cream together unsalted butter with brown and white sugars until fluffy. Add egg and vanilla.
  4. In another bowl, whisk baking soda, salt, and all-purpose flour; gradually combine with wet mixture.
  5. Gently fold in diced mangoes.
  6. Preheat oven to 350°F (180°C). On a parchment-lined baking sheet, scoop tablespoon-sized dough portions; flatten slightly and top each with sticky rice.
  7. Bake for 12-15 minutes until edges are golden; cool before serving.
