  • 2 cups cooked + shredded organic chicken breasts
  • 1 Tbsp Extra virgin olive oil
  • 2 Tbsps unsalted butter
  • 4 garlic cloves, minced
  • 4 cups organic chicken stock
  • 1 (16 oz.) package potato gnocchi, homemade or store-bought
  • 3 Tbsps organic all-purpose flour
  • 1 1/2 Tbsps Tuscan Marry Me blend
  • 1 tsp sea salt
  • 5-6 organic sundried tomatoes
  • 1 Tbsp tomato paste, organic
  • 1 1/2 cups organic heavy cream
  • 3 Tbsps cooking apple vinegar (or sub with chicken stock)
  • 1/2 lemon, freshly-squeezed
  • 1 cup chopped organic kale
  • 1 cup freshly-grated parmesan
  • 1-2 cups tomatoes (optional)

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant.
  2. Stir in shredded chicken and pour in chicken stock. Bring to a gentle boil.
  3. Mix flour with water to form a slurry; add to the pot while stirring to thicken.
  4. Season with Tuscan blend, sea salt, sundried tomatoes, and tomato paste; simmer for 5 minutes.
  5. Add gnocchi and heavy cream; cook until gnocchi is tender (approx. 3-5 minutes).
  6. Stir in cooking apple vinegar (or extra stock), lemon juice, chopped kale, and grated parmesan; heat for another minute before serving.
