  • 1/4 cup whole wheat panko breadcrumbs
  • 1 egg
  • 1/3 cup sun-dried tomatoes (chopped)
  • 1/4 cup feta cheese
  • 1/4 cup parmesan cheese
  • 2 cloves garlic (minced)
  • 1/4 cup green onions (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, egg, sun-dried tomatoes, feta cheese, parmesan cheese, minced garlic, green onions, parsley, salt, and black pepper. Mix until just combined.
  3. Using a cookie scoop, form the mixture into approximately 2-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 20 to 25 minutes or until lightly browned and cooked through.
